Ingredients
Beef Mixture:
- 1 lb. of ground beef
- 1 can of diced tomatoes
- 2 tbs chili powder
- 1 tbs cumin
- 1/2 tbs paprika
- 1/2 tbs salt
- 1/2 tsp garlic powder
- 1/2 tsp minced onion
- 1/2 tsp oregano
- 1/2 tsp pepper
- 1/4 cup water
Peppers:
- 6 bell peppers (I use a variety of colors, but you can use whatever colors you would like)
- Olive oil (for coating)
- Salt and pepper (for coating)
- Rice (try my Mexican rice recipe for added flavor or just use regular rice)
- Shredded Mexican cheese
- Sour cream (optional for topping)
- Parsley (optional for topping)

Collect all necessary ingredients for your meal, such as ingredients for the beef mixture and peppers. Ensure you have everything you need before starting.

Wash and chop the tops off of the peppers, cleaning out the insides. Coat the peppers in olive oil (I usually eyeball it) and salt and pepper (to taste). Ensure all of the peppers are coated evenly. Place peppers on a baking sheet with tin foil and cook in the oven for about 10 minutes at 350 degrees Fahrenheit or until peppers are soft. Be sure not to overcook as they will continue to cook in the oven later.

Bring a pot of water to a boil for the rice. Cook ingredients according to your recipe. Pay attention to cooking times to avoid overcooking or undercooking.

In a skillet, sauté ground beef until lightly browned. Be sure not to overcook as it will continue to cook in the oven later. Next, reduce heat and add in minced onion and tomatoes. Let cook for a few minutes or until soft. In a separate bowl, mix together spices and water. Then, add the spices and water mixture and give it a stir until all of the spices are incorporated throughout the beef mixture evenly. Add more water if necessary! Let simmer until the spices and water mixture has thickened and coated the beef mixture evenly. Once beef mixture and rice are cooked, stir until combined. Then, remove peppers from the oven and scoop the combined mixture into the peppers until all the peppers are full (I like to enjoy any leftovers in a flower tortilla or over my favorite tortilla chips)! Finally, top with shredded Mexican cheese to your liking and cook in the oven until the cheese has melted and is lightly golden!
